My girlfriend laughs at me but I can't stand the smell of fried foods. So this is a way I can fix my shrimp and not have the smell from the deep frier.
- 1 large egg
- 2 tablespoons fat-free half-and-half
- 1⁄3 cup seasoned bread crumbs
- 1⁄3 cup grated parmesan cheese
- 1⁄4 teaspoon cayenne pepper
- 1 lb peeled deveined medium shrimp
- Preheat oven to 350 degrees.
- In a small bowl, whisk together the egg and half-and-half.
- In a separate small bowl, combine the bread crumbs, cheese and pepper.
- Dip each shrimp in egg mixture and then coat with bread crumb mixture.
- Place on a foil-lined baking sheet.
- Discard leftover egg mixture and bread crumb mixture.
- Bake shrimp for 7 to 9 minutes or until shrimp are pink and no longer translucent.
Excellent!! Made this for our 4th of July holiday meal...I used more shrimp (about 1/2 lb. more - to feed 4) so I upped the breadcrumb/Parmesan cheese mixture. I tossed a little salt and pepper into the breadcrumb mixture. When this was ready, I decided it needed a little "visual oomph" so I drizzled some melted butter over the shrimp along with minced fresh basil, and put it under the broiler for a minute. Everyone at the table raved. Great recipe, and I will make it again!
My husband loves Popcorn Shrimp, but I've never found a recipe that was easy enough to do. The only little hiccup I found was that each shrimp needs to be dredged through the breadcrumbs individually rather than plonking them in the breadcrumbs and tossing them in a bowl. Otherwise they were a hit. Thanks!
One has to know how much I truly love shrimp to know how much I was dying to try out your popcorn version. :D My dad is highly allergic and, as I cook for him, mom, and my son nightly, I don't get to have shellfish too often. But, I had some in the freezer that was just calling out for some breadcrumbs and a perfect recipe...oh, and for me. ;) This was terrific!!!! In place of the parmesan cheese, I used vegan parm and I never need as much of it as I did when I ate the real stuff, so I cut it back just a tad. I used old bay seasoning as I'm fresh out of cayenne pepper. I really don't think that my alterations changed the wonderful flavor and outcome of this recipe. As for throwing out the leftover egg and bread, well, I took care of that by dipping it back in the egg and then back in the bread. No use to let it go to waste. ;) I'll say the typical, wish I could give you more than 5 stars, but seiously, thanks so much for a yummy new recipe to add to my personal favorites!
