Recipe by Cinnamon Turtle
This is a wonderfully simple, light dessert that is easy enough for everyday and elegant enough for your most discerning guests. Serve with vanilla ice cream or a dollop of mascarpone or creme fraiche, or vegan whipped topping. This recipe is from Vegetarian Times.

This was a really great dessert, and everyone loved it. The sauce didn't thicken as well as I hoped it would, but I did manage to coat most of the peaches with it. But boy was it good!
- 1⁄2 cup dry white wine
- 1⁄4 cup sugar
- 8 large peaches, peeled, pitted, and halved
- 4 tablespoons butter
- 3⁄4 cup pine nuts
Directions See How It's Made
- Preheat oven to 350. Whisk together wine and sugar in a small bowl. Place peaches cavity-side-up on a foil-lined baking sheet. Fill each cavity with wine mixture. Bake one hour or until tender.
- Just before serving, melt butter in small skillet over medium heat. Add pine nuts, and cook 3 to 4 minutes, or until golden brown.
- To serve: Place two peach halves on each plate. Top with 1 1/2 tbs. pine nuts.
