    This is a wonderfully simple, light dessert that is easy enough for everyday and elegant enough for your most discerning guests. Serve with vanilla ice cream or a dollop of mascarpone or creme fraiche, or vegan whipped topping. This recipe is from Vegetarian Times.

    Directions:

      Preheat oven to 350. Whisk together wine and sugar in a small bowl. Place peaches cavity-side-up on a foil-lined baking sheet. Fill each cavity with wine mixture. Bake one hour or until tender.

      Just before serving, melt butter in small skillet over medium heat. Add pine nuts, and cook 3 to 4 minutes, or until golden brown.

      To serve: Place two peach halves on each plate. Top with 1 1/2 tbs. pine nuts.

      This was a really great dessert, and everyone loved it. The sauce didn't thicken as well as I hoped it would, but I did manage to coat most of the peaches with it. But boy was it good!
