Baked Peaches With Golden Raisins

  1. Lightly grease a 9-inch baking dish; set aside.
  2. Preheat oven to 350 degrees.
  3. Measure brown sugar, butter, vanilla, honey, lemon juice and salt into a 1-quart saucepan.
  4. Over low heat, stir and heat until sugar is dissolved and mixture is syrupy.
  5. Stir in raisins.
  6. Keep warm, but do not allow to boil.
  7. Arrange peaches, cut side up, in prepared baking dish.
  8. Pour syrup over all.
  9. Bake, uncovered for 20 minutes, or until peaches are just beginning to caramelize.
  10. Serve warm, 2 halves per serving.
  11. Top with whipped cream, vanilla ice cream, or frozen yogurt.
