ingredients
- 2 summer squash
- 2 zucchini
- 1 yellow onion
- 8 ounces mushrooms, sliced
- 2 red peppers
- 1 1⁄2 cups frozen peas
- 1⁄4 cup olive oil
- salt and pepper
- 2 tablespoons italian seasoning
- 1 lb penne
- 1 cup parmesan cheese
- 1 cup asiago cheese
- 8 ounces fresh mozzarella cheese
- 3 cups marinara sauce
directions
- cut up all veggies. Toss with salt, pepper, italian seasoning, and olive oil. Roast in 450 oven for 15 minute Cook penne until al dente. Toss veggies, cheeses, sauce and pasta together. Bake in greased casserol pan for 25 minute.
