Baked Parmesan Chicken

"This is modified from a recipe on the menus4moms website. It's simple to prepare, and the crunchy topping gives it great texture. I serve it on a bed of spinach fettucini for a pretty presentation. I used bone-in, skin-on thighs, but you could really use whatever pieces you have on hand, or that your family prefers. If using boneless pieces, you will need to cook for less time."

  • Preheat oven to 350.
  • In a small saucepan over medium low heat, melt 2 tablespoons of the butter. Add the garlic, and stir to coat. Continue cooking until garlic is fragrant.
  • Add the remaining butter, and leave over the heat until melted.
  • In a pie plate or shallow dish, combine crumbs, cheese, oregano, salt and pepper.
  • Dip each piece of chicken in the melted butter, coating all sides, then dredge in the crumb mixture. Place in a baking dish.
  • Drizzle remaining butter over the chicken pieces.
  • Bake uncovered at 350 degrees for 45 minutes or until done.

  2. Delicious! I didn't have Italian breadcrumbs so I used panko with a whack of home made italian seasoning. I likely went a bit heavy on the butter but I'm like that. ;) I had read the reviews so adjusted my seasonings accordingly. It was too hot to get the big oven going so I made these with boneless, skinless thighs in the toaster/convection oven. It took 30 minutes to get to 165 degrees and another 3 minutes to broil for a touch more colour.<br/>Made for Food.Commandos ~ ZWT 7
     
  3. We enjoyed this chicken recipe. It was really simple to put together and very tasty and moist. Made for ZWT 7 for the Vivacious Violets.
     
  4. Good go to recipe for a quick weeknight meal without a lot of fuss. I did use boneless chicken breasts that I pounded out flat so cooking time was reduced. Served over whole wheat fettuccine noodles. Since my breadcrumbs were unseasoned I used a really big dose of a Garlic Pepper Grinder and then added some Italian seasonings mix to the crumbs to get a good tang to them. Served it to 3 teens and me and it was gobbled up! Made for your win in Tic Tac Toe Event 2011.
     
  5. I used boneless chicken breasts. It took a lot longer than stated, but that's because of my oven, not the recipe. I had a little of the butter left over and poured it over the top. It was very good, nice and moist, very flavorful. Thanks for posting!

I live near Seattle, WA with my husband of 11 years and our pet ferrets. We're lucky enough to own a home with a big, south facing yard which is great for entertaining. It also allows me to have a big vegetable garden where I grow most of my own herbs and a lot of the vegetables we eat in the summer, as well as a bunch to share with family and friends. In my professional life, I'm an accountant- but what I really love to do is cook and eat! Most of my ability is self-taught. I love to experiment with new recipes and techniques, most of which I get from watching way too much food tv and reading foodie magazines. Recently I decided to start a personal chef business and have cooked for a few clients. I love the challenge of designing a menu to fit a family's specific tastes and needs, and then cooking it for them to enjoy. For me, cooking is an expression of love. Everyone needs to eat, but food is more than just fuel for the body, it can nurture and comfort ~ give us a memory from childhood, or a retreat when we feel ill. I always think of the people who I'm cooking for when I make a dish, and there is no better compliment than when someone enjoys the food I've made especially for them. I also like to do OAMC- style cooking, but instead of using it mainly to get dinner on the table, I focus on getting lunch in the bag! Eating out is far too expensive in both dollars and nutrition to make a habit of, yet I want a hot, satisfying meal to enjoy in the middle of the day.
