Simple and easy. I got this off the Rachel Ray show. Nice appetizer to go with just about anything you have for dinner.
- 1 lb olive
- 1 tablespoon olive oil
- 1 -2 slice citrus zest
- Pile everything in the middle of a foil packet and seal.
- Bake in a 350 oven until heated thru.
- Open foil up and enjoy.
I selected this to make for *PAC Spring 2008* because I really enjoy Rachael Ray recipes. The Rachael Ray recipe I found on line was quite different from this version. The recipe called for several strips of orange and lemon peel as well as crushed red pepper flakes and fennel seeds. I made the spicier version and the olives quickly disappeared.
