For Oatmeal
- 2 cups quick-cooking oats
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1⁄2 cup brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups milk
- 3 ripe bananas
- 2 tablespoons brown sugar
- nonstick cooking spray, for pan

For Topping
- 1⁄2 cup jif creamy peanut butter
- 1⁄4 cup finely chopped peanuts
- 1 banana, sliced
directions
- Preheat oven to 350°F Grease an 8x8 square baking pan with nonstick cooking spray.
- In a medium size bowl, combine oats, baking powder, salt, and cinnamon. Stir.
- Beat egg in a separate large bowl. Add vanilla, milk, and ½ cup brown sugar. Whisk until well blended.
- In a separate bowl, mash one banana with 2 tbsp brown sugar. Chop one banana in small pieces. Slice remaining banana in rounds.
- Add dry oat mixture to milk mixture. Stir lightly until combined. Add mashed banana and chopped banana (not slices). Stir once.
- Place about half of the sliced banana in bottom of pan. Pour in oat mixture. Press the remaining sliced banana into the top of the oat mixture.
- Bake for 40-45 minutes, or until center is firm.
- While oatmeal cools, melt peanut butter over very low heat, stirring constantly, until a thin sauce forms (be careful not to burn). Serve oatmeal with melted peanut butter, chopped peanuts, and freshly sliced banana.

After reading Maito's review, I also adjusted some of the amounts: 1/2 tsp salt, 1/2 tsp cinnamon, 1/3 cup brown sugar; for dietary reasons, Fresh & Easy brand Unsweetened Organic Soy Milk and 1/4 cup Eggbeaters (equiv to 1 egg) to replace the real milk and eggs. 40 mins seemed just right. All the flavors could be tasted, even with the reduction. I melted the pb in the micro on high for 15 secs, stirred, then another 15 secs. I was very intrigued to try this with natural pb, but I just can't afford it right now, so I used my favorite and what I have on hand, Jif Creamy. I followed the rest of the recipe as written. Bf said he liked this better than the last baked oatmeal I made (he thought I was making the same thing, but adding pb and bananas and chopped nuts) and I told him this is a totally different recipe. He said it was good. I really liked the pb sauce and nuts and fresh banana better than eating this without. This was substantially thicker and rose nicely so probably does yield 6 servings. I made the full batch, but there will be leftovers. This is the second time I've made baked oatmeal. Thanks vitalev! Made for PRMR.

Very yummy oatmeal! More appropriately named Banana Peanut Baked Oatmeal (a la king - made me think it was a savory dish, lol, til I read the ingredients!). I didn't care for the peanut butter as a topping, but did like the nuts and fresh banana on it. Day 2 I used macadamias instead of peanuts and that was an awesome combination! I used only a quarter of the salt and cinnamon, and halved the brown sugar, and these flavors were still prominent for us. Served hot from the oven - a delicious and filling breakfast!
