Baked Oatmeal

I mix this together, cover it and refrigerate overnight, then bake it in the morning. Every time I serve this, when I have guests, they always ask for the recipe. Feel free to add whatever you would add to your regular oatmeal. I sometimes add nuts, raisins or blueberries. Add what you like and I hope you enjoy it!

Great baked oatmeal! I have been in search of a good baked oatmeal recipe and this is it. I have tried may others this week, but this has the best flavor for the calories! Tried three different variations, apple & raisin, peach & cranberry, and strawberry. All were excellent, but DH and I liked the peach & cranberry the best! When adding the fruit I used dried cranberries, fresh apple, canned peached (in 100% juice), and frozen strawberries. I equally divided the fruit to equal 3/4 C of fruit and added it before baking. This would also be great with some nuts if you like!!! Plan to try it next with blue and black berries!

  1. Preheat oven to 325 degrees F.
  2. In a large bowl combine the oatmeal, baking powder and salt.
  3. Mix in milk, eggs, applesauce, brown sugar.
  4. Pour into a greased casserole dish.
  5. Bake at 325 for 45 minutes.
  6. Serve hot, topping each with vanilla yogurt.
