Baked Mushroom Chicken

This is my family's favorite chicken dish. It has great flavor and is so easy to make!!

I like the simplicity of this dish and yet it looks quite fancy when you serve it. I added a few thinly sliced onions to the top of each breast. Excellent recipe! Made for Spring PAC 2013.

  1. Flatten each chicken breast half to ¼ in thickness. Place flour in a resealable plastic bag. Add chicken a few pieces at a time. Seal and shake to coat. In a large skillet, brown chicken in 2 tbls butter on both sides. Transfer to a greased 11”x 7”x2” baking dish. In the same skillet, sauté mushrooms in the remaining butter until tender. Add the broth, salt and pepper. Bring to boil; cook for 5 min or until liquid is reduced to ½ cup. Spoon over chicken. Bake, uncovered @ 375 degrees for 15 minutes Sprinkle with cheeses. Bake 5 mins longer or until juices run clear.
