Because I don't need to feed a small army, I cut this recipe in half. While I enjoyed it, it wasn't quite what I was expecting. The taste was more eggy than cheesy. I'll probably make it again, but I'd increase the macaroni, and leave out an egg or two.
Made this in two 8"x8" baking dishes & since I regularly cook for a neighbor couple who love mac-&-cheese, the other half went there! We really enjoyed the flavor combo of the 4 cheeses (nothing optional about any of them for us!)! Thanks for sharing a wonderful keeper of a recipe!
