Baked Jacket Potato With Baked Beans and Cheese

"This is such a simple, quick meal. It's a very British way to serve a baked potato! Baked beans here are different than in the US so if you can get a British brand, the recipe would be more authentic. British beans are cooked in a tomato sauce with no BBQ flavour. That said, I'm sure this would be yummy with BBQ beans as well!"

directions

  • Preheat the oven to 350°F or 180°C.
  • Bake the potatoes as per your personal preference- I bake them in the oven for about an hour, until the skins are firm and the centres are soft. You may like to smear with butter, sprinkle with salt and wrap in foil.
  • Towards the end of the potatoes' cooking time, heat the baked beans in a pan on the stove, until hot.
  • Remove the potatoes from the oven, cut into quarters without cutting the whole way through. Squeeze the outside of each quarter to "pucker up" the flesh.
  • Pour the desired amount of baked beans over the potato and sprinkle with grated cheddar.
  • Sprinkle with salt and pepper to taste and serve!

  2. A good recipe, but note that the standard method of cooking Jacket Potatoes in Britain is to pierce one of the small ends (the same end you'll make and X on at the end) with a fork before or mid-way in cooking. That stops the skin from wrinkling a lot and the flesh from pulling away from the skin. On an episode of the BBC Series "As Time Goes By," Lionel says he's started Jacket Potatoes in the oven and Judith asks, "Did you remember to pierce the skin?" So it must be a good thing to do! Of course, scrubbing the potatoes before cooking is a good idea since you're eating the skin!

  3. I needed a really quick dinner tonight and this fit the bill beautifully. I cooked the potato in the microwave and the beans in tomato sauce on the stove. The cheese used was a 3-cheese Italian blend. The end result was delicious. Made for ZWT6 Family Picks

  5. Great quick easy lunch thoroughly enjoyed by the DM and myself. This was made super quick by the use of the microwave 12 minutes for the potatoes and 2 minutes for the baked beans. Thank you Shuzbud, made for Everyday a Holiday.

I am a primary school teacher living in Bristol, England. At the moment I teach Kindergarten, known here as Reception. I really love my job but it doesn't leave much time for hobbies! I enjoy cooking for friends and aim to try new recipes as often as possible! My signature dish has to be White Chocolate Blondies, as it is my most requested sweet treat, and I definitely have a sweet tooth! Update- 5-5-09: Somebody was very thoughtful and gave me the gift of a premium membership. I can honestly say it made me feel so good! If you're out there, THANK YOU so much! I can't quite believe the generosity... <img src="http://i13.photobucket.com/albums/a254/Sharon123/Copyoftag300-banner.jpg" border="0" alt="Susie's Banner for Newest Zaar Tag"> <img src="http://i270.photobucket.com/albums/jj81/HokiesLady65/Recipezaar%20Album/iplaytagin.jpg"> <img src="http://i147.photobucket.com/albums/r317/j_welcome/pics2/food/PRMRcopy.jpg"> <img src="http://i10.photobucket.com/albums/a132/tgifford/Game%20Room%20Banners/AM%20Banners/holidaybadge.gif" border="0" alt="Photobucket"X> <img src="http://i270.photobucket.com/albums/jj81/HokiesLady65/Banners/holidayprmr2.jpg"> <img src="http://i80.photobucket.com/albums/j166/ZaarNicksMom/Animation6.gif"> <img src="http://i80.photobucket.com/albums/j166/ZaarNicksMom/PACsticker-Adopted.jpg"> <img src="http://img29.imageshack.us/img29/7505/mybanner4a394ee84d5f0.jpg" > <img src="http://img.photobucket.com/albums/v726/annacia/Permanent%20Banners/cc-banner-7-09.jpg" border="0" alt="Photobucket"></a> <img src="http://i250.photobucket.com/albums/gg271/MrsTeny/Permanent%20Collection/PACSpring09Participation.jpg"> <img src="http://i250.photobucket.com/albums/gg271/MrsTeny/Permanent%20Collection/PACSpring09Iwasadopted.jpg">
