Here's a super-easy recipe featuring almost everybody's favorite: honey mustard. This makes a flavorful sauce in which the chicken cooks (one responder called it a flavor explosion with each bite!), and it keeps the chicken moist, too. This dish is good served over rice or pasta.
- 1⁄2-1 onion, chopped
- 1⁄4 cup butter
- 1⁄2 cup honey
- 1⁄2 cup Dijon mustard
- salt and pepper
- 2 teaspoons curry powder
- 6 boneless skinless chicken breasts

- Preheat oven to 375 degrees F.
- In a small microwave-safe bowl, combine onion with butter. Cook on high power 2-3 minutes until onion is tender. Remove from microwave and add honey, mustard, salt, pepper. and curry powder. Mix well.
- Place chicken in a single layer in shallow pan. Pour sauce over chicken. Bake, uncovered, for 32-27 minutes until chicken is thoroughly cooked.
