Baked Green Beans With Mushrooms & Pine Nuts

"This is a great do ahead recipe - get it ready put it in the fridge and 30 minutes before dinner pop it in the oven. I like my beans al dente, so adjust your timing accordingly; 30 minutes produces an extra crisp bean. If you like your veggie well cooked allow up to an extra 20 minutes"

  • Sauté the mushrooms & shallots in the oil (butter) for a minute or two, sprinkle in the thyme Line a baking dish with foil (use enough so you will be able to close over top of the beans).
  • Pour the Madeira into the bottom of the foil lined dish, add beans, top with mushroom mixture.
  • Seal the foil.
  • Bake in 375°F oven for approx 30 minutes (adjust time to your liking of crispness). Open foil and sprinkle with toasted pine nuts.

  1. Absolutely delicious! The deceptively simple combination of ingredients turned out excellent. I had neither madeira nor medium sherry available today, so I used a Chardonnay and it turned out great. This is a gorgeous, elegant looking and very tasty side dish. 20 minutes in the oven was perfect for me.
     
  2. Bergy always has the best veggie recipes and thanks to her, I am becoming quite fond of my most hated food group: veggies! These beans were delicious; I did end up cooking this at 400 degrees for about 30 minutes and they tasted great, not overdone at all. Now Bergy, the can you get me to like broccoli and cauliflower??? Thanks, Bergy!
     
  3. I followed the suggestions of other reviewers and added the pine nuts last and also cooked for 40 mintues. I just didn't care for this all that much. I'm not sure if it was the flavor of the sherry I used or if it needed additional spices...can't really put my finger on it, but I don't think I will make these again.
     
  4. I,too found the nuts got too moist.I liked the recipe,but next time will add the pine nuts just before serving.
     
  5. This was a nice sidedish for the chicken I made over the weekend. I made this aa directed, only I used the suggested apple juice as the liquid. I had to cook this much longer than the suggested 20 minutes to bring them to the tender-crisp stage (approx. 35-40 minutes). I also kept the packet closed after removing them from the oven to let them do a little additional cooking. I was a little disappointed that the pine nuts became sort of water logged. Next time, I think that I'll toast the nuts and then throw them in at the end. Thank you for this nice side dish recipe!

On January 10 2010 I will celebrate 9 years of Life with Zaar. I can't imagine being without it! It has become part of my daily routine. I feel very privileged to be one of the hosts on the Photo Forum. Taking photos of my culinary efforts is a full time hobby and I love it. My friends all know what to expect when they come to dinner "Are you finished taking pictures?" or "Did you get a photo of so & so?" I never let them wait too long and the food is NEVER cold! I now have over 6000 photos on Zaar - some fairly good and some definitely not so good. I am happy to say that practice does help. My roots are in Vancouver BC Canada - a very beautiful city that holds many wonderful memories for me. In 1990, I decided that for my retirement years I may want to settle in a smaller community and found a slice of heaven in the North Okanagan B.C. I love living here but every once in a while I miss the bright city lights, the Broadway shows and some of the small wonderful ethnic restaurants that Vancouver abounds in. That is easily resolved. I just take a trip to the coast, visit with friends for a weekend see a show and feast on Dim Sum or other specialty foods. I am getting a bit long in the tooth but was a very adventurous person. I have river rafted Hell's Gate on the Fraser river, been up in a glider over Hawaii (no not a Hang Glider!), gone hot air ballooning in the Napa Valley & the Fraser Valley, driven dune buggies on the dunes in Oregon, Para sailing in Mexico and tried many other adventurous, challenging, fun things. I have yet to try bungee jumping or sky diving. I may do them yet. I love to travel and experience other cultures. Mexco has been a favorite haunt. I have visited that lovely country many many times. Australia is another favorite as is England! In the past 16 months I have taken off 61 pounds and feel wonderful. I am off all medications and all systems are GO! In years I may be 79 but in spirit I am still in my forties. We are only as old as we allow ourselves to feel. Always think positive. Do something a bit challenging every day & always do something silly every day. Be a kid again! Laugh every day - it is internal jogging.
