This is a colourful do ahead side dish. The carrots are really crisp when done. Kind of like hot raw carrots!!

  1. Place carrots in casserole dish.
  2. Pour margarine, lemon juice and sherry over carrots.
  3. Sprinkle with green onions.
  4. Bake at 350 for 30 minutes.

OMG, this is almost too delicious to believe! I scaled this down to 1 serving and used butter instead of margarine, and the flavour just skyrocketed! I didn't have either sherry or apple juice, so I used water, and yet the end result was fresh, baked carrots with a very delicate natural sweetness. The lemon juice and green onions complimented the carrots absolutely perfectly. I baked this covered in a glass dish, so the carrots weren't really crisp, but just done. I can't wait to try this with apple juice and bake uncovered! Thanks Tebo... this is a PERFECT recipe!

These are very tasty! I used butter and sherry and just melted the butter in the microwave in the baking dish then mixed in the carrots and added the remaining ingredients. Served with recipe #465433. Thanks for sharing!

This was fantastic! I was looking or a different way to do carrots and I am so glad I found this recipe. I used white wine instead of sherry, and they turned out cripsy with a touch of sweetness. Thanks so much!
