Baked German Potato Salad

This recipe was given to me by a German lady that I worked with some time ago, it's a nice change from the usual potato salad recipe

• Total Time: 55 mins
• Prep Time: 25 mins
• Cook Time: 30 mins

Ingredients:

Servings: 8

• 1 cup diced bacon (about 3 strips)
• 1 cup diced celery
• 1 small onion , chopped
• 1 tablespoon salt (or less)
• 3 tablespoons all-purpose flour
• 1⁄3;-2⁄3; cup sugar (or less depending on how sweet you like it)
• 2⁄3; cup vinegar
• ½ teaspoon fresh ground pepper (to taste)
• 1 1⁄3; cups water
• 8 cups sliced cooked potatoes

Directions:

1. Set oven to 350 degrees F.
2. Butter a 3-quart baking dish.
3. Fry bacon; drain drippings from skillet reserving 1/4 cup.
4. Add celery, onions, salt and flour.
5. Simmer, stirring constantly.
6. Add sugar, vinegar, pepper and water.
7. Bring to a boil.
8. Toss bacon and potatoes together in the baking dish.
9. Pour celery mixture over top.
10. Cover and bake for 30 minutes.

Another of your great recipes! I took this dish to a Church Potluck tonight and it was delicious. I always thought German Potato Salad was a difficult and time-consuming ordeal; however, this recipe was really easy to make. Thanks!

We had "german" potluck night at our Wednesday night Bible study. This salad was just scrumptious! You could even stir in some kielbasa slices if you wanted. Another great recipe Kittencal :-) Thanks!
