Baked Fish with Crispy Herbed Shrimp Topping

"This is a delicious company dinner for your fish loving friends. Since the fish has to marinade anyway, it's a good make ahead dish to then just pop in the oven at dinnertime."

  • Make the marinade: Whisk together the first four ingredients, adding salt and pepper to taste Place the fish in one layer in a baking dish, skin side up.
  • Pour all but 1/4 cup marinade over the fish and let them marinate, covered, in the refrigerator for 3 hours.
  • Stir together the shrimp, onion, garlic, parsley, capers, basil, tarragon, crumbs, mayonnaise, Parmesan and the remaining marinade.
  • Salt and pepper to taste, and mix until combined well.
  • Bake the fillets in the marinade, skin side down, in the middle of a preheated 400 degree oven for 10 minutes.
  • Spread evenly with the topping and cook for 10 minutes more, until topping is light golden brown.
  • Serve with lemon wedges.

  2. A great recipe! I used 8 thin sole fillets, omitted the white wine and drained the liquid after baking the fillets.
     
  3. I have made this several times and everyone says it taste like something from a nice resturant. Most want the recipe, but some just ask me to make it again and be sure to invite them. Thanks Geema.
     
  4. I agree... wow! This recipe was absolutely delicious, even though I took some shortcuts and made some substitutions. Green onion was a good substitute for the freshness of parsley, which I didn't have on hand. I also omitted the tarragon, which I didn't have, either. The shrimp I used were rather low quality shrimp that I wanted to get rid of, but you in this recipe you couldn't tell! Thank SO much for a simple, EASY, delicious recipe that my hubby and I just loved.
     
  5. I made this a while ago and forgot to make my review. WOW!!! and a WOW again. I eat fish on a regular basis and this recipe was so good. My husband brought leftovers to work the next day and had people following him back from the microwave. I used Basa filets and marinaded for 8 hours. I left out the tarragon and capers and instead added 1/8 cup of soy sauce to both the marinade and the topping. I also didn't add the bread crumbs until I was just about to put the topping on the fish and I loved it. The aroma alone will fill your kitchen.
