Baked Fish & Chips

"I like to eat this when I have a craving for fish & chips but don't want to deal with something deep fried. I realised after the first two reviews that "coating mix" is quite vague. I know what it's supposed to mean probably only because I know what the original recipe called for! I usually use Recipe #154510 for the coating, but you can use Shake 'n Bake from the box if you desire. From Kraft Food & Family"

  • 2 large baking potatoes
  • 14 cup reduced-fat Italian salad dressing
  • 23 cup coating mix, divided
  • 1 lb white fish fillet (such as halibut or cod)
  • 14 cup reduced-fat mayonnaise

  • Preheat oven to 400 degrees F. Cut each potato lengthwise into 8 wedges; place in a large bowl. Add italian dressing; toss to coat. Add 1/4 cup of the coating mix; toss to coat. Arrange on baking sheet sprayed with cooking spray. Bake 20 minutes.
  • Meanwhile, spread remaining coating mix on a large plate. Spread tops of fish fillets evenly with half the mayonnaise; press, mayo-sides down, into coating mix on plate. Repeat with remaining mayonnaise and coating mix on plate to coat remaining sides of fish fillets. Place on broiler pan.
  • Bake potatoes and fish 15 minutes or until fish flakes easily with a fork and potatoes are tender.

  1. I only made the fish part of this recipe so am not reviewing with stars to be fair. I used a unseasoned bread crumbs and cracker crumb mixture for the coating. The mayo & crumb mixture worked well on the fish. I did feel it needed seasoning. I realized the recipe probably was calling for a seasoned prepared coating mix afterwards. I do plan to play with this recipe again. Reviewed for ZWT3.
     
  2. I grabbed this recipe in a hurry and realised at the last minute when I wento t make it that I didn't actually know what coating mix was. I do know it's probably not available here in NL because I'm good at paying attention to new stuff in our supermarkets LOL. In it's place I used a little flour, fine bread crumbs, some onion powder and herbs. I followed the rest of the recipe as given. The potatoes were nice but nothing to rave about but the fish was really very tasty, and DH mentioned several times that the fish was really good indeed. However, I have no way to tell if my changes would have adversely affected the correct taste so I am writing only a comment and not giving stars. I can only say that the way I made it suited the fish a LOT better than the potatoes and that the fish at least will be repeated. Please DO realise that I may have inadvertantly changed the recipe beyond recognition(apologies) and that you need to make this and judge for yourself. Thanks!

I moved from Ohio to the West Coast about 4 years ago and I currently work as an assistant at an intellectual property law firm in Silicon Valley. I love to cook and experiment in the kitchen. I'm not much of baker, though, since I hate to measure my ingredients. Like most everyone else these days, I am always on the lookout for low-calorie recipes. When I'm not cooking or browsing through cookbooks from the library or second-hand store, I can usually be found knitting something, playing video games with DH, or just watching tv. I also love exploring the great outdoors, whether it be hiking, kayaking, biking, or just doing a little sightseeing around town. I am finishing up a paralegal certificate at the community college and am now considering preparation for law school.
