  1. Nice simple recipe, have to love that! And not so overly seasoned as to overpower the flavor of the fish, got to love that too :) Thank you for giving me a simple, busy-as-a-one-armed-paper-hanger-every-weeknight-but-won't-wear-me-out recipe! Kudos to you!! :D

  2. Very fresh and flavorful! We live in Wisconsin so "fish fry" is king. It's rare to find a baked option. Thank you!

  3. Very good alternative to cod baked in butter or cheese sauce. Was looking for a healthy recipe.

  4. I made this cod recipe and whisked up an a shrimp parmesan Alfredo sauce and served it with baby green peas and white wine! Delicious and easy!

  5. Very easy and tastes so great with the lemon juice and olive oil and the garlic! I left out the thyme and still was wonderful!!

Tweaks

  1. Didn't tweak anything, used the recipe as it was presented. Loved it!!!

  2. I used oregano instead of thyme because I DID NOT have my glasses on when choosing my spices! Happy accident. I also made a very small amount of panko/butter crumble to sprinkle on top and broil briefly.

I live in a small suburb of Nashville, TN with my sweet hubby and beautiful, smart, sassy daughter. I recently gave up the ever stressful life of "working mom" in order to manage my home. I'm really enjoying all the opportunities this has given me. Not only do I get to enjoy those wonderful mother-daughter moments with my tween girl, but I get to COOK actual meals for my family! What's really great is when the two combine, moments in the kitchen with my daughter... It brings a little tear to my eye.
