This is a recipe that I made up for special functions that I catered when I worked in a local hospital. Simple to make.

  1. Pre heat oven to 425 f.
  2. Place fillets in a glass baking dish.
  3. Bush with melted butter
  4. Top with tomato, green pepper, and onion slices.
  5. Pour wine in over fish.
  6. Season with salt and pepper.

Excellent recipe!! We loved this. I made it as written and wouldn't change a thing. I served it with Parmesan Fettuccine and Sauteed Swiss Chard With Bacon and it was all perfect together. Thanks for sharing.Made for Football Pool 2011.

Hi SC, we like fish a lot in our house and this was a very nice recipe so easy to put together,There wasn't anything I would of changed and made it as directed. I made in two separate dishes, and served roast potatoes on the side a very nice flavours from the wine and I seasoned with old bay seasoning. A very nice lunch, and a great new way to serve fish for me. Made for PAC Spring 2010
