This, like most other, took longer than suggested to make, but my husband loved it. I wasn't in love with it, but ate it nonetheless. Maybe too much chicken broth, I think next time I will lessen that, but thanks for the recipe!

Great rice! Definitely like something you would get at a Tex-Mex restaurant. I took the suggestion of parboiling it first and then sticking it in the oven... worked out nicely. I topped the rice with Lime Chicken-Avocado Salad, and the combo was amazing...I'll definitely be doing that again. Thanks for a keeper!

The rice has delicious flavor, however it took me a long time - almost an hour - to soften the rice in the oven. Next time I will parboil the rice and then finish in the oven. Thanks for a lovely recipe -- so much better than those seasoning packets in the grocery store!

Delicious!! This took longer in the oven than expected (about 40 minutes), but the results were well worth the wait. Thanks for sharing!

I served this with Cheese and Chicken Enchiladas. Very tasty and a perfect accompaniment. Made for Alphabet Soup Game. Thanks for posting Miss Diggy!
