Baked Chicken Reuben

"My mom made this all the time when I was a kid, it is so delicious! The recipe came from "Favorite Recipes; Award-Winning Chicken Recipes" on pg. 30."

• Yields: 4 breasts
• Serves: 4

ingredients

• 4 chicken breasts
• 1⁄4 teaspoon salt
• 1⁄4 teaspoon pepper
• 16 ounces sauerkraut, well drained
• 4 slices swiss cheese
• 1 1⁄4 cups thousand island dressing

directions

1. Pre-heat oven to 325 degrees Fahrenheit.
2. Place chicken in a single layer in greased baking pan.
3. Sprinkle with salt and pepper.
4. Press excess liquid from sauerkraut and spoon over chicken.
5. Arrange cheese slices over sauerkraut.
6. Pour dressing over the top evenly.
7. Cover pan with aluminum foil. Bake about 1 1/2 hour or until chicken is tender.
