GREAT EASY RECIPE. if you like more spice put in a little more pepper and basil. if you use seasoned cast iron pans as the baking dishes with a little pam and pre heat the pans in the oven up to temp, the fish will not stick. I didn't turn the fillets over and they were perfectly cooked in 15 min. (I've found that glass baking dishes tend to stick the food but pre heating helps.
I made this last night and it was delish! Easy! I used a corn muffin mix and added a little extra salt and garlic powder but that was all that I tweeked on it and it turned out perfect! We are on a lowfat diet so I lined the pan with foil and just sprayed it with non-stick spray. I served with fresh spinach sauteed with onions, mushrooms, scallions and a touch of soy sauce and olive oil and a baked potato. My husband LOVED this! Thanks!
My FIL liked this catfish a lot but I was disappointed in the flavor. The fish was tender and moist but the breading stuck to the bottom of the casserole dish. I used a spatula and removed some of the breading and laid it on top of the fish. The flavor was bland even with the seasonings and light ranch dressing.
The flavor of this recipe is fine, but my breading stuck to the pan. I even sprayed the glass pan I used with Pam, first.
