Great simple delicious recipe! I substitued sliced whole wheat Pampered Chef beer bread in place of the baguette and cooked in the toaster oven so I didn't even have to heat up the kitchen. Delicious, quick, simple!
This was delicious!! I used every day brown bread toasted, I had no baguette. and I just made two for my supper, oh my sooo delicious with a huge fresh tomato and part skim mozzarella cheese!! I shredded some of the basil and put it on top of the cheese before i put it in the oven. I make this when I need a quick snack or light meal for myself. When I am trying to be healthy, I have made this using Oroweat Double Fiber bread with good results. In a pinch when I do not have fresh basil available, I have substituted with dried basil or a dried Italian herb blend.
I was searching to see if this was posted yet, and I am disappointed to see that more people have not tried it yet! It is so delicious! My mom is a big fan of Giada and recently made this for a family get-together. My mother makes Caprese daily for my father using fresh tomatoes and basil from the garden. She decided to try this variation, and I am glad she did! I loved the cheesy, gooeyness of the baked product, atop the delightful crispy bread. The taste of the tomato and basil just put it over the top. *The only difference I saw with the recipe my mom used, and the one you posted was after you put on the basil, my mom brushed the remaining olive oil on each slice over the basil before sprinkling salt and pepper. My family devoured the whole batch! I will make this often! Thank you for posting!
