Baked Cabbage (Bulgaria)

This recipe was featured on week 40 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Bulgaria is my 40th stop. Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients.

  1. Mix the cabbage with the peppers and tomatoes, add the spices, oil, vinegar and water and transfer to a baking dish.
  2. Bake for 1 to 2 hours (after the first hour, keep checking to make sure that the top of the dish doesn't burn) or until the cabbage is soft.

I very loosely followed this recipe, but it turned out fantastic. Firstly I could for someone who requires a special diet, so I left out the oil and salt and opted not to add the vinegar. I added a couple of small chopped onions, garlic and sliced mushroom. I threw it all in a big roaster and baked it stirring frequently to avoid burning. Wow, This was so packed with flavour and really very little effort. Thanks for posting.
