My uncle used to eat calf brains sauteed in butter and onion than served with eggs for breakfast. This version can be served with potato salad and remoulade sauce. Found this recipe on and posted for ZWT 4 - Germany.

  • 2 beef brains, calf
  • salt and pepper, to taste
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • oil (for frying)
  • 1 lemon, sliced, garnish
  • fresh parsley, garnish


  1. In a large bowl of cold water soak brains for 1 hour. Drain, remove membrane, and cook in salted water for 5 minutes. Remove, cool, and cut each one into three parts sprinkling well with salt and pepper.
  2. Beat egg in a shallow dish and add bread crumbs to another shallow dish. Dip brain pieces into the beaten egg and than the bread crumbs covering well. Add breaded pieces to a large skillet of hot oil and brown.
  3. Place on platter, garnish with lemon slices and parsley, serve immediately.
