ingredients

• 1 onion, diced
• 1⁄2 large red bell pepper, diced
• 1 chipotle chile in adobo, seeded and diced
• 2 (28 ounce) cans baked beans
• 1 tablespoon mustard
• 1⁄2 cup packed brown sugar
• 1 black plantain, chopped
• 1⁄2 cup ketchup or 1/2 cup barbecue sauce

directions

1. Place all ingredients in a large casserole pan.
2. Mix and bake in a preheated 350°F oven for 1-1/2 to 2 hours.
