Baked Beans Traditional Bean-hole Beans

"Authentic lumbermen's Bean-Hole Beans, baked overnight in the ground. This recipe is the real deal and was traditionally served with biscuits, colesalaw, molasses cookies/gingerbread. From our local Patten Lumberman's Museum where every second Saturday in August they serve hundreds."

  • Soak 2 pounds of yellow-eye beans overnight.
  • Parboil beans until the skin peels away by blowing on a few beans in a spoon.
  • Add the mix to the beans and stir slightly.
  • Slice 1 pound salt pork into sections.
  • Cut each section partly through in a criss-cross pattern and place pieces on top of the beans.
  • Cover the beans and set to one side.
  • The bean hole should be dug into the ground and be half again as large as your dutch oven or any other tightly lidded pot.
  • Using seasoned hard wood, accumulate live coals until hole is 3/4 full.
  • Shovel out the coals leaving about 3 inches of live coals in the bottom of the hole.
  • Set the bean pot in the hole on top of the 3 inch bed of coals.
  • Shovel the rest of the coals around and on top of the pot.
  • Cover with dirt and check for escaping steam and making sure none is leaking out.
  • If steam is leaking out, cover area with more dirt.
  • Leave in the ground for 8 hours or overnight.
  • Note: Make sure the beans are completely covered with hot water before putting in ground.
  • The beans need to go into the ground hot.

  1. How cool is this? Never heard of Bean-hole Beans, but I love the historical aspect. I did them in the crock pot because to be totallly honest I dig in my yard to plant my garden, and flowers, period. I'm sure the "hole method would enhance the flavors even more, but these were really good.
     
  2. Only four because I have to dig the hole! Really, I'll try it in a Dutch Oven. I love it though, now I can tell my Mom I do do somethings a little more modern! I am going to give this to my brother, he'll do it right!
     
  3. Hi Aroostook, Cumberland County born and raised and returning soon to live. What would life be without "a beanhole bean supper to go to???" :) I use an old recipe and do it in my crockpot now but these are lovely! Thanks for posting, ayuh!

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
