This is a great dish to take to pot luck picnics. It's also a hit with those who usually don't care for beans (myself included). Prep time doesn't include overnight soaking.

  1. Soak the beans overnight. Drain in the morning and cover with fresh water and simmer for half an hour.
  2. Dice the bacon and cook in a frying pan until crisp, reserve 3 Tbsp of the drippings.
  3. Combine all ingredients with the beans and place in a buttered baking dish. Cover and bake at 250 degrees farenheit for 3-6 hours, cook uncovered for the last hour of cooking.
