Just something I threw together... this can be used as a breakfast, or a healthy dessert! I listed the amounts I used, but unless you dice the apple REALLY finely, I think it would probably be better if the oatmeal and liquid were increased to 1/3 cup and 1/2 cup, respectively.
- 59.14 ml oatmeal
- 2.46 ml cinnamon
- 0.25 ml nutmeg
- 14.79 ml Splenda sugar substitute
- 2.46 ml baking soda
- 4.92 ml lemon juice
- 1 small apple, diced
- 78.07 ml water (or milk)
- Preheat oven to 350.
- Dice the apple and pour lemon juice over it (to prevent browning).
- Combine the first five ingredients in a bowl. Add the apple, lemon juice and water and stir to combine.
- Pour into a round 2-cup Pyrex dish. Bake for 30 minutes, or until most of the liquid has evaporated.
I really enjoyed this, I was surprised that it firmed up by itself without eggs or anything to set it. Not too sweet and good consistency, this went well with yoghurt for brekky. Thanks!
Not having the recommended pan, I baked this in a small seasoned cast-iron skillet, which worked very well. As a breakfast it's perfect -- I added the extra oats and water suggested by the chef. If you're serving it for dessert it could be sweeter. I cheated and topped it with a bit of commercial whipped topping, which was great! made for Photo Swap.
This came out awesome. I added pears to it. I think it could use more sugar, but other than that it was great thanks for sharing!
