Baked Acorn Squash With Sherry (Thanksgiving)

This is from a cookbook called "Cooking by the Numbers" which referred to the amount of people the recipes served. I haven't tried this yet but it couldn't be more simple.

Directions

  1. Cut squash in half and scrape the cavities clean.
  2. Melt the butter and mix with the brown sugar and sherry.
  3. Pile this mixture into each cavity and bake at 375 degrees for 45 minutes to an hour.

I did the same, then sprinkled cinnamon on the top of the squash just before baking. I baked covered, in a pan with about 1/2 inch of water, for one hour. They were fabulous; you could easily serve this "vegetable" as a dessert!

We were surprised by the super almost Maple syrup flavor of the squash. It was a fairly large squah so took apprx 1 hour at 375F coverrd in foil uncovered the last 15 minutes-Thanks OOlala for a neat recipe
