This recipe is so much easier, thanks to the microwave. The recipe came from my GE Microwave cookbook that came with the oven which is almost 20 years old now.
- cut squash in half, scoop out seeds and any loose membrane, place cut side down in a baking dish to which you have added about 2 Tbs water.
- Cover loosely with wax paper and cook on high for 8 minutes in microwave oven.
- Open oven and turn squash over, add 1 to 2 tbs of butteror margarine in cavity, recover with wax paper and cook for 6 additional minutes.
- Allow to stand for 5 to 10 minutes before serving.
This worked so well for me! Just as good as when it is baked in the oven, at a fraction of the time. Thanks for sharing!
The hardest part about this recipe is cutting the darn thing! But it was worth it! This was the first time I've ever had Acorn squash and it was so good...because there weren't any herbs or spices the true flavor shone through! Quite yummy!
