I followed this recipe to a T and it came out great! I brought some into work to share as well and everyone there also loved it. It did need a little extra salt at the end imo and I'd like to double the lime juice and maybe add a little more onion next time. But this recipe was super easy and really good. Even though I think it's supposed to be eaten warm I've been eating it cold in this Vegas heat, healthy refreshing and filling!
This turned out SO GOOD! Very spicy so I added a little sour cream to tone it down. My husband loved it and also loved the spice. Will definitely be making this again!
This only gets three stars in my book, because it was incredibly dry. I used white rice (preference) and could only imagine how much worse it would've been had I used brown. I felt it needed done more tomato juice or something. Do use all four tomatoes, possibly more and maybe some canned tomatoes for their juice. Other than that the flavor was nice.
This was super! I didn't have any jalepenos or lime juice, so I used lemon juice instead and increased the number of splashes of hot sauce. I also added some diced zucchini and 1.5 tsp of ketchup. Served this with <a href="http://greek.food.com/recipe/mediterranean-chicken-breasts-351722">Mediterranean Chicken</a> Wonderful!
I made this last night to serve two. I used 1 can of spicy black beans (drained and lightly rinsed), 1 cup frozen corn and added other ingredients to taste. I used only about 1.5 cups of cooked (white) rice, and it was perfect. Served with roasted chicken thighs, roasted baby carrots and steamed broccoli. Thanks for such a refreshing recipe!
Been trying slowly to change to meatless at least a few days a week. This is easy, reasonably priced, and fabulous flavor.
Yummy! Added a teaspoon of cumin, stirred it all together and served as a side dish with salsa lime chicken. Looking forward to the leftovers for lunch tomorrow. Thanks for sharing the recipe!
I made this last night for dinner, I didn't have any lime juice so I used lemon and it was delicious. We will definitely be eating this again and again. Instead of rice I used quinoa very good.
I loved this! I feel like it tastes best if you allow it to rest for a day so they flavors can soak in, much like a salsa. I added extra lime juice, cumin and ancho chile pepper. I could eat it all but I'm trying to restrain myself.
