  • Cake: Sift dry ingredients together.
  • Beat egg, oil, buttermilk, liqueur, coffee together.
  • Add to the dry ingredients; beat together for about 3 minutes.
  • Pour into greased/floured 10" springform pan or 9x13 pan.
  • Bake at 350 for 35 to 40 minutues for the springform or 25 to 30 minutes for the 9x13- or until done.
  • Cool.
  • Frosting: beat ingredients together until stiff.
  • Turn cake out onto a plate and frost with whipped cream mixture.
  • Sprinkle with chocolate curls.

  1. I'd like to make this either as a Bundt cake, as shown, or a 2-layer 9-inch cake. Please tell me what the baking times would be for the Bundt cake and for the 2-layer 9-inch cakes. Thank you.

  1. Wow! The cake is superb! So easy to make. It rises up nice and light, yet stays very moist and the flavor is rich and delicious! Perfect texture. I baked it in a 9" springform so it took about 10 more minutes to bake to perfection. The whipped cream frosting was very good, not too sweet and held up well to applying it to the cake. Next time I will double the Bailey's in the frosting too - you could taste it, but I wanted more. It took several slices to decide :) Thanks for sharing the recipe!
     
  2. Made this to take into work, but didn't have any Baileys on hand, so used Tia Maria Lusso, (which is a cross between Baileys and normal Tia Maria). This was wonderfully moist, with lots of rich, deep adult flavour. Will be keeping this recipe for future use.

  4. There’s a reason why recipes are rated 5 stars and this one is the example . I never post reviews, however, this one deserved the recognition. This cake was incredible! Delicious! I made it for St Patrick’s Day. I added two eggs as suggested in the comments and it was perfect. The icing is to die for. The expression on my guests faces when they tasted it said everything. I’m already planning again when to make it next. Amazing flavored cake!

  1. I honestly do not know why people still buy cake mixes. This recipe is absolutely brilliant. The cake turned out so moist and beautiful. I used one banana instead of one egg and I used Silk dark chocolate almond milk instead of buttermilk....and it was perfect. I made it for my brother in law for his birthday and the whole family loved it. Thank you!<br/><br/>PS...I would totally mix the dry ingredients and keep them in a zip lock for faster use...like a home made cake mix ;)

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
