LOVE this - from the Mennonite Community Cookbook. My mother made a skillet version of this a lot when I was a kid. She used fresh corn from our garden. Of course, fresh corn cut off the cob makes this recipe even more yummy! A great summer recipe.

  1. Mix corn with salt, pepper and sugar.
  2. Place corn in a buttered baking dish.
  3. Cover entire dish with finely diced bacon.
  4. Bake at 350F for 35 minutes or until bacon is crisp.

GREAT. I used frozen corn that I had defrosted. I cooked it a little to long as it was kindof rubbery, but the flavor of this was wonderful! I also used Splenda sweetener, and lean turkey bacon. Thank you SReiff, wonderful recipe!

This will probably become the staple way I cook corn from now on. I LOVED this dish. I used 1 can (15oz) canned corn (drained), 1/4 tsp garlic salt, 1/16 tsp black pepper & 3/4 tsp Splenda. I cooked & chopped 2 slices of turkey bacon & added that to the corn. Baked it for about 25 min. Tasted wonderful! Boring old corn will never be at my table again! Thank u for sharing.
