  1. Heat oven to 400 degrees.
  2. Pat the pork dry with paper towels.
  3. Season with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
  4. Top the pork with the thyme and wrap it with the bacon.
  5. Heat the oil in a large cast-iron skillet over medium-high heat.
  6. Add the pork and fennel.
  7. Season with the remaining salt and pepper.
  8. Cook the pork for 2 minutes per side.
  9. Add the apricots.
  10. Transfer skillet to oven and roast for 20 to 25 minutes.
  11. Let rest for 5 minutes.
  12. Slice the pork and serve with the fennel and apricots.
