Wow! For such simple ingredients, the flavor is outstanding. I added about a third of a cup of frozen spinach for color and was pleased with the results. I'm thinking about adding this to my Thanksgiving table. Thanks, Mary, for a recipe that even my squash disliking DH gobbled up!
Made this as a side dish to turduckin and it was well received. Used three different kinds of winter squash (butter nut, acorn and ambercup)that I roasted in the oven, then followed the rest of the recipe exactly, adding a little more cheese to the top. The result was a nice savory side dish that went will with the rest of the dinner. Delicious!
Delicious! I used a combination of butternut & acorn squash. Monterey Jack cheese melted beautifully. I didn't want to take the time to cook bacon so I used a jar of Hormel real bacon bits & used a few sprinkles of cheese on top too. Only change I would make is to mix 1/2 of bacon into squash next time and reserve 1/2 for top.
This came together in a matter of 20 minutes and really disguised the fact that this was vegetables. I will say that I had to drain and drain and drain the boiled, mashed veggies or else I would have had a watery mess on my hands. Other than that, it will make another appearance at my table for sure!
I made this last week didn't tell hubby it was squash and just served. He ate every bite and asked for more! Was shocked it was squash, he's a beliver now!
Wonderful squash recipe! I made sure to drain the cooked squash/onions very thoroughly. I followed the recipe as written except cut way down on the salt. The bacon topping is a nice extra, but this would be just as delicious without the bacon. I'll make this again; especially when friends/family give me squash from their gardens. Thanx!
