This is kinda a different way of fixing regular roasted chicken. You can add more bacon in the stuffing or over the chicken to give it more flavor depending on your own taste.

Ingredients Nutrition

  1. Preheat oven to 350'.
  2. Wash and prepare whole chicken, drain excess water off chicken.
  3. Mix together melted butter and salt, black pepper, paprika,Thyme and Old Bay Seasoning and brush over the chicken.
  4. Place in a roasted pan and set aside.
  5. In a large sauce pan add bacon pieces and butter, begin to fry pieces and add onion and celery. Saute lightly.
  6. Add minced garlic and stir to combine.
  7. When onion has turn lightly brown add chicken broth and herb stuffing. Stir well.
  8. Add salt, pepper and poultry seasoning and let simmer til mixture is not completely dry. (still moist like)
  9. Turn into a bowl and stir in egg and evaporated milk.
  10. Add stuffing to the cavity of the whole chicken.
  11. Add 3-4 slices across top of the whole chicken and place in oven and bake 2hrs or until done.
  12. After a hour cover with foil to reframe from over browning.
  13. The last 20 minutes uncover chicken and let brown alittle more.
  14. NOTE: If you have some stuffing mix lefted over you can bake the rest in a lightly greased baking dish or you may just bake the stuffing separate from the chicken at 350' for 30 minutes (depending on the amount lefted over).

First, let me say I didn't make the stuffing with this. I only wanted to see how the bacon roasted chicken would taste. We liked it, the smokiness of the bacon gave a nice flavor to the chicken. DH really likes bacon, so he thinks I should mummy wrap the chicken in it next time. :)

I'm not going to rate this just in case there is a mistake for some of the amounts in the recipe. I started to make the stuffing exactly as written. But after I added the chicken broth, (I used a can with 14.5 oz. in it, so it wasn't even quite the 2c. stated to use in the recipe) it was very runny. Not like stuffing at all. More like a thick soup. So I'm wondering if the amounts of the stuffing and broth are the correct amounts. Otherwise this looks like a delicious recipe. Sorry
