Out of this world. What a deal. The potatoes cooked in bacon drippings give this such wonderful flavor. Add the green onion and basil in the eggs and it just sends it over the top. I made this for dinner and my whole family loved it. Thanks for posting this Kibbie.

Easy to make, delicious and satisfying. I made this for dinner and my whole family really enjoyed it. The only change I made was to add a clove of minced garlic with the potatoes, but it seems like it should be easily adaptable for whatever meat, cheese, and herbs I happen to have on hand in the future.
