Besides being colorful, this side dish pairs well with most meats…pork, beef or poultry. It's a fitting vegetable for autumn meals. The mild sweet flavor of the carrots is enhanced by the bacon and onion combination.
- 4 medium carrots, sliced
- 2 bacon, strips diced
- 59.14 ml chopped onion
- 19.71 ml brown sugar
- 0.59 ml pepper
- Place carrots in a small saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until tender.
- Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 2 teaspoons drippings.
- Saute onion in the drippings and stir in brown sugar and pepper until brown sugar is melted.
- Drain carrots; toss with onion mixture.
- Top with bacon.
Great carrots. The sweetness from the brown sugar and the salty bacon are wonderful together. Made as written and would not change a thing. Going into my Best of cookbook. Made for Everyday Holiday.
this is going in my man trap cook book. its really easy tastes good. made it with Barley Leek Soup and worked well .people that dont care for carrots would eat this . i just cooked up a bag of those little snack carrots easy
