It's not quite BBQ weather here in the UK (but we are ever hopeful!) so I made these under the grill. They were delicious, I used gluten free breadcrumbs and added a touch of smoked paprika to the mix, which gave a lovely smokiness to the bacon. We all agreed we will be making these again,,,and you never know we might actually get to use the BBQ!!!

  1. Place the bacon in a food processor with the breadcrumbs, spring onions, parsley, lemon rind, egg white and pepper.
  2. Process the mixture until it is finely chopped and begins to bind together.
  3. Divide the mixture into 8 even sized pieces and shape into long ovals around 8 soaked bamboo skewers.
  4. Sprinkle the koftas with paprika on a barbecue for 8-10 minutes, until browned and cooked through.
