A different way of cooking traditional pancakes in a skillet using bacon drippings instead of cooking spray or butter. This way makes the pancakes crispy/crunchy on the outside and light and fluffy on the inside :-) This recipe calles for traditional pancake mix but you can make your own from scratch.

  1. Cook bacon in skillet over medium heat until done on each side. Make pancake batter according to directions. Drain bacon on paper towels. Keep the heat on medium. If there is a lot of smoke, turn down the heat to medium-low. Pour about 1/4 to 1/3 cup of batter into the drippings for each pancake. Fit as many as you can in skillet. Cook pancakes until bubbles appear on top and flip them over on the other side as you would normally cook pancakes. Drain them on paper towels. I like to put another paper towel over them and press a bit to drain any excess fat. Serve with your choice of toppings.
