My husband was born in Germany. This was a traditional meal that he has now passed on to our children. The kids love it (especially with ketchup for some strange reason).
- 1 lb pasta (any pasta works, enough to feed 4-6 people)
- 6 eggs
- 1⁄2 lb turkey bacon
- 2 tablespoons butter
- 1 teaspoon salt and pepper (or to taste)
- Cook noodles.
- Scramble eggs.
- Fry bacon.
- Mix the bacon, eggs and pasta all together.
- Brown butter and pour over mixture, mix.
- Add salt and pepper to liking.
Ah, this brings back memories... My PennDutch mother used to make this on rainy days. The perfect german comfort food. I made it tonight for my family and even my husband (who was skeptical at first) enjoyed it. I did add some grated cheese to the scrambled eggs to up the protein content a bit. I second the addition of maple syrup! Other toppings we used to use: stewed tomatoes, ketchup, hot sauce/salsa, parmesan cheese.
When i was in elementary school my family had an exchange student from Germany. She introduced my family to this. She was a vegetarian however and didn't do bacon. It was just leftover pasta and eggs. DELICIOUS. I top it with maple syrup. Sounds gross, i know, but I just love this!
