This soup was excellent! I made it according to the recipe. It was easy to make, and warms up great for leftovers. It is very cheesy. I don't care for sharp cheddar, but I used it anyway, and it was delicious. The sharpness is mellowed by the cream. I thought it made more than 6 to 8 servings. I believe it made about 13 Cups of soup.
Next time, I am going to double the bacon and use "whipping cream" instead of "heavy whipping cream", to try to cut back the calories. I am also going to increase the amount of potatoes. I thought about trying half and half, and then cutting out one of the Cups of water, but I'm not sure I want to ruin the soup.
I would highly recommend this. I had compliments from everyone that tried it. It has gone into my "Favorites" cookbook.

This soup was soooo tasty! Instead of using bacon bits IN the soup, I cooked 7 or 8 strips of thick-cut pepper-bacon until crispy, and crumbled them ON the soup right before serving. Can't wait for the next cold day to make this soup!

I LOVE Baked potatoe cheddar soup. And my favorite was at Chilis....Until this, its sooo good. You have to try it. I put mine in bread bowls and it was so cute and yummy!

Great soup and soup-er easy! My family is picky and they loved it. I bought a big bag of real bacon bits from costco and dumped in half a bag. I also added asiago and fontina cheese to mix it up. I skipped the water and it was a little thick. Maybe add a cup or so. Also for a lighter version - use I can't believe it's not butter and mix 1 cup of whipping cream and 1 cup of fat free half and half.

Wonderful flavor, easy to put together. Tasted wonderful tonight, can imagine how great it will be tomorrow! I served it with cheese and crackers, carrot sticks and cream cheese filled celery. I did not hear one complaint at supper tonight and for that, I thank you!

Good recipe but no need to make the roux separately. Just sauté onions and celery in all of the butter till soft then add the flour to make the roux and cook a few minutes then add broth and continue from step 3 of recipe.

Just made this soup. Excellent as everyone has said. I double the recipe however I forgot to add the water. At that point it was perfectly thick and rich, if one chose to add no cream at all it would be perfectly satisfying. I used half and half to cut the calories and never did add the water because it was so good I was afraid to alter it. Next time I may try using no cream at all and really cut the calories. Add the cream last so you can determine for yourself if you really want it. I thought it was excellent without any cream.
