Bacon Bit Carbonara

- 6 ounces pasta, I used spaghettini
- 1 garlic clove, minced
- 1 green onion, green part only
- 1⁄4 cup breadcrumbs
- 1 tablespoon olive oil
- 1 tablespoon pine nuts
- 1 fresh mozzarella balls, golf ball or 1 bocconcini, sized
- 1 -2 tablespoon feta cheese
- 2 tablespoons sour cream
- 1 pinch cayenne
- 1 pinch oregano
- 1 pinch salt and pepper
- 1⁄2 cup green peas
- 2 eggs
- 2 tablespoons milk
- 3 tablespoons bacon bits
directions
- Cook pasta.
- In a skillet, heat some olive oil.
- Add minced garlic, oregano, salt, pepper, cayenne, bread crumbs and pine nuts.
- Stir often until toasted.
- Remove from heat.
- Chop green onions.
- Mince fresh mozzerella.
- Scramble egg with milk.
- Add a bit of mozzeralla to eggs, and stir and cook/scramble as you would for normal eggs.
- Defrost peas in colander.
- Drain pasta over peas.
- Retaining some pasta water, put pasta, peas, eggs, feta, sour cream, bacon bits and onion into same pot.
- Toss lots.
- Pepper heavily.
- Serve with salad and crusty bread.

I'm from Oklahoma (Sooner born/Sooner bred); I've lived in the Southeastern-most corner of Tennessee, the FM 1960 area of Houston, in San Diego for eight years, and I now live in Burbank. I have a DBF and a DBC (dear blind cat) named Floyd. I wish I had never found this site, because I can't develop a standard repertoire of meals since I'm always browsing for and finding new recipes.
