Quick, easy, and delicious. I modified the ingredients to fit our tastes and it came out perfect. I don't care for zucchini so I took it out and added onion and cheese. It quickly made it into my recipe book.
This was perfect for 2 people as a light dinner. Served with buttered sour dough toast. I did deviate from the cooking method, in that I placed the entire pan (after adding the eggs) into a 350 oven and baked it for 15 minutes. Made for Everyday Holiday Tag :)
Very quick and useful/versatile recipe. My DS was even eating it cold. I used leftover browned ground beef instead of bacon - great midweek meal. Made for Everyday is a Holiday.
