Here is a nice salad you can have for breakfast.
- 6 bacon, slices cooked, reserve drippings
- 3 tablespoons cider vinegar
- 1 teaspoon olive oil
- 1 teaspoon Dijon mustard
- 2 eggs, fried
- Combine bacon drippings with cider vinegar, olive oil, mustard, salt and pepper.
- Toss with lettuce.
- Place egg on lettuce.
- Top with crumbled bacon and croutons.

I made this for breakfast this morning as a 1 serve using 2 rashers of middle cut bacon and instead of croutons I served it on a slice of wholemeal/wholegrain buttered toast. I enjoyed the flavours from the sharpness of the dressing on the crispy cos lettuce with the crispy rashers of bacon and the silkiness of the soft fried egg.
