Bacon and Cheddar Stuffed Mushrooms

"I found this recipe in a newspaper database. I haven't had a chance to try it yet, but it sounds delicious and I wanted to put it out here for safe-keeping."

  • Cook bacon until crisp. Drain, dice and set aside.
  • Preheat oven to 400.
  • Remove stems from mushrooms setting caps aside. Chop stems.
  • Melt butter in saucepan. Add mushroom stems and onion. Cook until onion is soft.
  • In medium bowl, combine the bacon, 1/2 cup of the cheddar cheese and the cooked mushroom stem/onion mixture. Mix well.
  • Divide mixture among mushroom caps.
  • Bake in preheated oven approximately 15 minutes or until cheese melts.
  • Remove from oven and sprinkle with remaining cheese.

I'm a grandmother who loves having the grandkids around. My son is currently living with me (on a short term basis) so I get to see and spend time with his kids more than I ever had, and that's a great thing. I love trying new recipes and since I have found RecipeZaar, the new dishes have been streaming. Sometimes I think the kids would prefer a little break, but until they speak up, it's something new for them about everytime they visit with us. I don't consider myself a 'cook,' I can only follow recipes. To me a cook is someone who can come up with their own recipes and have success at it (like my daughter).
