I made this to go alongside some fish using butternut pumpkin or squash as you call it. I was worried from the ingredients that it might be a little bland but the onion flavour gives it just enough punch, a lovely side and a great different way to serve pumpkin. I think this would also be great with some bacon added, yummo! Oh I topped mine with seasoned breadcrumbs rather than cracker crumbs..

  1. Preheat oven to 375 degrees.
  2. Combine all ingredients and mix well.
  3. Pour into pam sprayed dish. Bake for 40-45 minutes.
  4. Can make this into two smaller dishes and freeze one.
