I made this to go alongside some fish using butternut pumpkin or squash as you call it. I was worried from the ingredients that it might be a little bland but the onion flavour gives it just enough punch, a lovely side and a great different way to serve pumpkin. I think this would also be great with some bacon added, yummo! Oh I topped mine with seasoned breadcrumbs rather than cracker crumbs..

Vicki - This was an interesting dish. I did find it rather greasy with the amount of butter and next time would definitely reduce that amount. The overall flavor is good. I used Ritz crackers to top the casserole. Tagged in AU/NZ Recipe Swap #15 May 2008.

This was a delicious squash recipe. When mixing it up I thought the amount of onions was going to be a bit too much for my husband, but he said he really liked it. He was a bit afraid to try (because of the onions) But said he was pleasantly surprised. I used unsalted saltines since that is what I buy, so it needed a bit extra salt, but that was my fault. I think this may make it to the Thanksgiving table. I see you have a whole series of "Baby's.." recipes and you leave me wondering who baby is...
