Fresh and easy, this salad is the perfect accompaniment to another recipe I have posted -sage and ricotta stuffed chicken.

Directions

  1. Whisk together the olive oil and the lemon juice.
  2. Toss the spinach in a large serving bowl with the olives and the combined olive oil and lemon juice.
  3. Season the salad with sea salt and freshly ground black pepper.

Good, simple of course but I liked this more than I thought I would. The dressing really complemented the baby spinach leaves. I used gourmet black olives with their seeds but think this would be better with sliced black olives (of course of good quality as well)

Very simple and appreciated. I added tomatoes for extra color. The dressing was enjoyed but we all ended up adding a dash of balsamic vinegar for our personal tastes. Thanks for posting this, most spinach salad recipes require more effort. This was great b/c I had a lot of other things going on in the kitchen.
